How long is necessary to prepare an exchange?
Preparation is critical to the success of each exchange. A minimum of six months is preferred
to locate a candidate and make the necessary arrangements for the month-long stay. Ideally,
the selected chef will have two months prior to arrival in the host country to collaborate with
the on-site team, discuss personal cooking styles and techniques, exchange recipes, plan menus and determine ingredient requirements and availability.

What are the aspects that the hosting organization has to consider?
It is important to consider the size of the dining program, the adjustment period and local
staff training time when scheduling a visiting chef to your place. Finally, consider special
events planned during the year that would benefit from a visiting chef’s international
culinary expertise.

Who is financially responsible for the visiting chef’s travel and transportation?
All travel and transportation costs are the responsibility of the host Sodexo affiliate,
including the visiting chef’s round-trip airfare.

How is the visiting chef compensated?
The visiting chef is compensated by his own affiliate during his stay abroad. The host
affiliate provides a nominal stipend to cover incidentals.

How are the costs distributed within the host country?
The host Sodexo affiliate may distribute or share the costs of the exchange any way it
decides within the district or between accounts.

What kind of accommodation is provided to the visiting chef?
Accommodation is arranged by the host Sodexo affiliate, preferably on campus. If
on-campus lodging is not available, the host affiliate is financially responsible for
appropriate alternate accommodation in a hotel.

What official documentation is required?
A work visa is not required as the exchange is treated as a business trip. A regular visa
and letter of invitation from the host affiliate may be required depending on the destination country. Please check with the appropriate consulate or embassy.

What is the best time for an exchange?
In addition to allowing six months for the preparation of the exchange, it is advisable to
consider other special events (i.e. celebrations, heritage months, etc.) that might benefit
from the specific expertise provided and PR generated by a visiting chef.

What is the typical agenda for the chef?
In order to have the most impact in a one month stay, working five days a week, a chef is usually scheduled to visit three sites. Please keep in mind the time needed to adjust to each
new kitchen and team as well.
